Hotel chain DoubleTree by Hilton is set to introduce ‘piebird’, a new restaurant and bar concept that provides its guests with “culinary experiences that feel like home”.

The concept is created by Hilton’s in-house consultancy StiR Creative Collective. It is expected to begin rolling out to properties in the US, with the first location opening in late 2025.

The inaugural piebird is anticipated to open at DoubleTree by Hilton Hotel Nanuet in New York, followed by a second location at DoubleTree by Hilton Hotel Asheville – Biltmore in North Carolina in early 2026.

“Through StiR Creative Collective, we’ll bring this innovative concept and scalable brand to life in DoubleTree hotels across the US, ensuring that guests enjoy exceptional culinary experiences that feel like home.” 

Over the past two years, StiR Creative Collective has launched several dining projects, including Leonessa at Conrad New York Downtown and Ayda at Waldorf Astoria Cairo Heliopolis, as well as multiple bespoke restaurant and bar concepts at Conrad Orlando.

It also enhanced the dining experiences at Canopy by Hilton Toronto Yorkville and Signia by Hilton Atlanta.

While featuring breakfast, lunch and dinner options, desserts will be a central part of the piebird experience. The menu will focus on seasonal pies and the signature piebird Pie, featuring chocolate custard and chocolate malt balls, available around the year.

The Cookie Martini, inspired by the DoubleTree chocolate chip cookie, and the piebird Palmer signature cocktail will complement the dining experience, alongside reimagined classic cocktails.
