Its culinary offering is centred on Terrain, a contemporary wine-country restaurant operated by The Ascari Group.
The venue includes an 80-seat main dining room and a 25-seat lobby bar.
It also features a Chef’s Table, offering locals and visitors a setting to “experience the food, wine and character of Niagara”.
The property also includes The Rooftop at The Clayfield, described as Niagara-on-the-Lake’s first rooftop patio. The hotel will also have a full-service spa.
For meetings and events, The Clayfield offers more than 5,400ft² of flexible space, including a ballroom equipped with audiovisual capabilities.
Hyatt said the hotel is scheduled to open at the “start of autumn” and it is currently accepting reservations.
Hyatt Luxury global brand leader Tamara Lohan said: “The hotels that stay with you are often the ones that feel completely natural in their surroundings, and The Clayfield has been shaped by Niagara-on-the-Lake at every turn.
“You see it in the architecture inspired by the escarpment and vineyards, in the food and wine, and in the way the hotel connects guests to the region.
“It’s an exciting, contemporary addition to Niagara-on-the-Lake and a brilliant new expression of the individuality we love about The Unbound Collection by Hyatt brand.”
