Hyatt Hotels has debuted its The Unbound Collection by Hyatt brand in New York, US with the opening of Grayson Hotel in Midtown Manhattan.

The new-build Grayson Hotel is owned, developed and managed by the Fortuna Hotel Collection.

It is designed by Italian Marcello Pozzi, founder and principal of MarceLLO Pozzi architecture & design.

The new hotel has 296 guestrooms, each featuring a collection of artworks curated by full-service global art consultancy, Indie Walls and other amenities including butler style mini bar.

Grayson Hotel boasts GRIT, a 24-hour fitness centre equipped with SoulCycle commercial bikes, cross trainers, a StairMaster HIIT machine, dumbbells, TRX treadmills, and more.

Dining venues at the property include an all-day dining restaurant, Harta, on the ground floor catering a pan-Mediterranean Brasserie. It features a collaborative menu between chef Jonathan Benno and executive chef Mark Zuckerman.

Bar Cima, which is located on the 28th floor, is a rooftop mezcaleria with indoor-outdoor seating.

Starting this fall, the hotel will welcome a new multiple dining experiences opened by a collaboration of New York City-based Apicii and all-star team of hospitality veterans including Michelin-starred chief culinary officer Jonathan Benno and beverage director Kyle Tran.

The company in a statement said: “In a city that has been rewriting its story for nearly 350 years, Grayson Hotel’s industrial-chic personality pays homage to the turn-of-the-century industrialisation of New York and the cross-cultural culinary awakening it inspired, ushering in a bright new chapter.” 

With the opening of Grayson Hotel, The Unbound Collection by Hyatt’s portfolio has increased to 35 hotels across the world.

Last month, Hyatt Hotels opened Fuji Speedway Hotel, its first Unbound Collection by Hyatt property in Japan.
